Noodle dough ingredients:

  • 280 grams of high protein flour
  • 4 grams of salt
  • 160 ml of water
  • 2 tsp moringa leaf powder
  • oil for soaking the dough
Other Ingredients:
  • 4 grams of shrimp paste, grilled
  • 8 red bird's eye chilies, sliced
  • 2 red chilies, sliced
  • 4 cloves garlic
  • 7 shallots
  • 2 eggs
  • 1 tbsp soy sauce
  • 50 grams of mustard greens, cut
  • 80 grams of bean sprouts
  • 3 tbsp oil for writing
  • 1 tsp granulated sugar
  • 1/4 tsp pepper
  • 1/2 tsp broth powder

2. Mix the noodle dough until smooth

In a bowl, add the flour, salt and Moringa leaf powder. Mix well, then pour the water into the dry ingredients. Stir with chopsticks until the texture is lumpy.

Then, move it over the cutting board. Knead briefly with your hands until the noodle dough comes together. Make sure the consistency of the dough is soft so the noodles don't get soggy.

3. Soak the noodle dough in oil

Form the dough lengthwise, then cut into 8 parts. Roll the dough and pull it back so that the shape is slightly elongated.

Prepare a container with oil. Dip the dough and make sure all the pieces can be submerged in the oil. Cover with plastic wrap. Leave it for 1-2 hours.

4. Form the dough into noodles

After settling, take the dough one by one. Then, flatten by hand. Make sure the width of the noodles is neat so that when pulled lengthwise the size remains the same.

Then, press the middle of the noodles with chopsticks to make it easier to pull and the edges can be wavy. Dance while being tossed until the dough elongates.

5. Boil noodles until cooked

When the noodle dough is long and elastic, tear the middle. Try to make the thickness of the noodles even and when tearing the dough, do it in one go so that the noodles are good.
