Who doesn't like corn. In Indonesia, corn is one of the food ingredients to replace rice, considering that corn contains carbohydrates which are filling and make the body more energetic. Moreover, corn can also be processed into various kinds of delicious food.

Not only eaten directly, corn can also be made into processed sweet desserts such as ice cream. Indeed, currently quite a lot of selling corn ice cream. You can also make your own soft and sweet corn ice cream at home, with just a few ingredients and following these steps.

1. Materials needed

To make corn ice cream, the following ingredients need to be prepared:

  • 5 pieces of sweet corn
  • 1 3/4 bowl heavy cream
  • 1 can of sweetened condensed milk
  • 1/4 teaspoon salt
  • 3 spoons of cornstarch
  • 1 spoon of vanilla extract
  • Caramel sauce (optional)

2. Pipil or shaved sweet corn

The first step, choose sweet corn to make ice cream. Sweet corn is picked when it is still young, so it is different from regular corn that has matured. Sweet corn itself contains a higher level of sugar in its seeds.

Clean the corn, then remove it from the stalks. You can do this by dipipil by hand. However, this method requires quite a long time. To make it faster, you should use a knife to shave it from the end of the corn stalk downwards, until the seeds are separated from the corn stalks.

3. Sweet corn blender

Next, place the sweet corn in a blender or food processor. Puree the sweetcorn for about 15 to 30 seconds until it's juicy. After that, remove the refined sweet corn from the blender.

Prepare a filter or clean cloth that is placed over the container. Then strain the blended sweet corn to get the essence. The water from the sweet corn juice will be used to make ice cream.

4. Heat the cornstarch

Pour the cornstarch into a saucepan. Then, heat using medium heat. Add three spoons of cornstarch. Stir constantly until the cornstarch begins to thicken, about 12 to 15 minutes. After that, turn off the stove and let it sit at room temperature for about 20 minutes.

In another bowl, mix the cream, condensed milk, vanilla extract and salt. Stir using a mixer at medium speed until all the ingredients are well blended. Mix until the dough is fluffy about two to three minutes.

5. Freeze the ice cream

After that, mix the corn starch into the mixture earlier. Stir until the two come together. Then pour the ice cream mixture into the container. Cover tightly using plastic wrap. Just freeze it in the freezer for about 12 hours or a full night.

Remove the frozen corn ice cream from the freezer. Then scoop using an ice cream spoon and place it on a plate or cone. Garnish with caramel sauce to make it look prettier. Home-style Corn Ice Cream is ready to be enjoyed.
